Sea salt production is divided into three stages: "brine boiling", "brine leaching", and "salt baking" .
 "Brine boiling" is practiced by our forefathers in ancent times.
"Brine leaching" is divided into four steps: firewood preparing, salt ash drying, brine leaching and decocting. Firstly, firewood is collected as fuel; secondly, straw ashes are spread on beach to absorb salt, and are swept and collected next day; thirdly, salt-absorbed straw ashes are compacted in ash pool, then are drenched again with sea water, so brine with higher salt concentration will flow into brine well or brine pit; lastly, brine, after reaching suitable concentration level, will be put on iron pan or bamboo pan (or pot) to be decocted.
"Salt baking" is an enegy-efficient high-yield method using wind and solar power to evaporate sea water. "Salt baking" is a new salt production method created by salt farmers after many experiments and practices along with productivity advancement, and has witnessed following stages in chronological order: pool baking, pan baking, beach baking, etc. In "pool baking" and "pan baking", firewood is needed as fuel in the beginning; then, brine, after reaching appropriate concentration level, will be baked into salt in pool or pan. In "beaching baking", sea water, circulated in grid-pool of salina with increasing concentration level, will be evaporated into salt crystal.
