Salt is an important strategic material, closely related to people's livelihood. In ancient China, there was a saying, salt tax income, half of the revenue. During the Spring and Autumn Period (BC 770BC476), Qi kingdom began to "put mountains and the sea under the states control". Since then salt has become an irresistible temptation to the rulers of each dynasty. Sea salt production and distribution have been state-monopolized, state-run, and even military controlled, only for the purpose to obtain a high tax income in case of military need Therefore, the history of sea salt, in fact, is not a purely technical one, rather, its also on intimate terms with management and tax. As a result of this , it has a more or less salty flavour, bitter yet with a long aftertaste. |
